We had burgers and brats for dinner last night, and while it was good, we had a TON of leftovers. As much as I enjoyed them last night, I couldn’t imagine having them for the next couple days, so I found a recipe that helped out with my bountiful supply of bratwursts. And if I do say so myself, it turned out pretty good. Even Ed agreed.

As you can see, I served it with potato salad and watermelon.
This is how I made it (if you’re interested)..
5 cooked bratwursts (sliced)
1 package of frozen broccoli
over 1 cup of cheddar cheese (just eyeball it to your desired amount)
onions that were sauteed in olive oil and garlic from last night
2 sheets of puff pastry
First, I mixed together the thawed broccoli, cheese, brats and onions in a bowl. I quartered the puff pastry sheets to get 8 squares, filled them with the mixture, and closed it up with a dab of water. Then I threw them in the oven (preheated to 350 degrees) for 15 minutes. Super easy!
